· Ingredients:
1 big aubergine /eggplant (or 2 small)
2 courgettes/zuchinis
2 red peppers
1 onion
2 garlic cloves
3 tomatoes
Olive oil
Herbs of Provence mix
Salt and pepper
Method :
Finely cut onion and garlic
Cut all the vegetables in medium size cubes
On medium heat, in a pot, saute the garlic and onions in 2 tablespoons of olive oil.
When golden and soften, add the chopped tomatoes and mix well
Let it cook for 5 minutes, the tomatoes will soften
Then add the red peppers and mix
Add the aubergines and mix
Add the courgettes and mix well
Finally, add the herbs and salt and pepper to taste.
Cover and let it simmer for 30 to 40 min, occasionally stirring
